CHINESE COOKING: Just like fresh pasta, home-made noodles has an important place in Chinese cooking. Hope you'll enjoy trying this recipe out.





HOME-MADE CHINESE WHEAT NOODLES WITH EGGS 自制蛋麵:

 

 

 

1 ½ cups all purpose flour                                          

2 eggs beaten + 1 egg yolk                                          

1 tbsp. oil                                                                    

¼ tsp. each salt & sugar

 

 

 

Sift flour together with sugar and salt into a large bowl. Make a well in the centre of flours and add in eggs, egg yolk and oil. Using a fork or clean hands, gradually work egg and oil mixture into flour, mixing and incorporating more flour as you go along until soft dough is formed. Knead dough until smooth and elastic. Cover with towel and let rest 30 minutes.

 

Use rolling pin to roll dough out into a thin sheet of even thickness. Cut sheet into desired width of noodles. Hang noodles out to dry on the back of a chair covered with plastic wrap.

 

Bring a large pot of slightly salted water to a rolling boil. Add noodles and cook until desired doneness.
