CHINESE COOKING: Try this recipe for shrimp as a change of pace.




SHRIMP IN SATAY SAUCE:





1 lb. shrimp                                                                

3 tbsp. cooking oil

½ tsp. minced garlic                                                    

2 tbsp. Satay sauce--store bought

½ cup chopped onion

seasoning for shrimp:

    1 tsp. each salt & sugar
    1 tbsp. tapioca starch                                              
    ½ tsp. sesame oil
    ½ tsp. light soy sauce                                              
    1 tsp. rice wine or dry sherry




Rinse, shell and de-vein shrimp. Wrap shrimp with several thickness of paper towels and refrigerate for 1 hour. Put shrimp in a large bowl and add seasoning ingredients. Marinate 30 minutes.



In wok or large non-stick saucepan, heat 2 tbsp. oil over high heat until very hot. Add shrimp and stir-fry for 2-3 minutes, or until just cooked. Remove with a slotted spoon.



Add 1 tbsp. oil to pan and heat it until hot over high heat. Add onion and cook for 1-2 minutes. Add Satay sauce and stir it in well; cook until fragrant. Return shrimp to pan, toss well to coat with sauce. Transfer to serving plate and serve right away.
