FISH: Do try out this recipe, which is a change of pace from the usual steam-fish method.



STEAMED GROUPER FILLETS WITH ORANGE SAUCE:




1 ½ to 2 lbs. grouper fillets                                                     

ham, cut into 12 thin slices

7 slices of oranges, cut into halves, ski removed                    

1 tbsp. egg whites

seasoning:

    2/3 tsp. salt  + ½ tsp. sugar
    1 tbsp. grated ginger with juice                               
    1 tbsp. tapioca starch mixed with 2 tbsp. water                                                       
    dash of white peppers

sauce:

    ½ cup orange juice                                                  
    1 ½ tbsp. sugar
    salt to taste
    1 tsp. custard powder mixed with 1 tbsp water




Rinse fish fillets, dry well with paper towels and cut into 14 rectangular pieces. Add   seasoning ingredients and marinate for 30 minutes. Toss orange and ham slices together with egg whites.



Arrange 7 fish fillets in a heat-proof dish, top each with a slice of ham and an orange slice; then cover each with another fish slice. Sit dish in a large bamboo steamer fitted over a pot of boiling water. Cover and steam fish for 5 minutes.



Put sauce ingredients in a small saucepan and bring to a boil, whisking well to mix, over high heat. Add custard powder to thicken sauce. Cook sauce for 1 minute; then pour over fish to serve.
