DESSERT CREPES: This is another good desert that can be prepared in advance and served without any fuss, after a nice meal.

GLAZED APPLE CREPES:

6 prepared crepes

3 red delicious apples

2oz. unsalted butter

sugar to taste

Peel, core, and slice apples.  Melt half the butter in frying pan and add apples, cooking until soft and tender, but still intact.

Butter a gratin dish large enough to hold the rolled crepes, side by side, without crowding.  Put 2 tbsp. of sautéed apples in each crepe, roll it up and place it seam-side down, in the dish.  Top this with a small piece of butter and sprinkle with sugar. The crepes may be prepared up to this point, 1 to 2 hours in advance.

At serving time, preheat oven to 450 degrees F. Bake the crepes for 10 minutes or until a light caramel glaze has formed on the surface of the crepes. Serve hot.
