DESSERT CREPES: It is a good idea to have crepes made in advance, so that a delicious dessert can be produced in very short order.



CREPES WITH NUTS & CREAM CHEESE FILLING:

 

 

 

1 quantity of crepe batter, see recipe

filling:

    ½ cup cream cheese, softened                                
    ½ cup chopped walnuts
    1 tbsp. lemon juice                                     
    ¼ cup sugar or to taste

fresh strawberries and whipped cream to serve, or lemon juice and sifted icing sugar.

 

 

 

 

Make crepes according to basic crepe recipe.

 

To make filling: Beat cream cheese with sugar to taste until smooth. Add lemon juice and walnuts. Beat until mixed in.

 

Divide filling equally between cooked crepes. Roll up and arrange on a serving plate. Keep warm.

 

Serve 2 crepes per serving.  Garnish crepes with strawberries and whipped cream. Or, if fruit and cream are not to be used, sprinkle lemon juice over crepes and dust with icing sugar to serve.
