BEEF: BBQ beef with sauce




BBQ ROAST BEEF WITH SAUCE:


3-3 ½ lb. piece of beef fillet                                       

salt and pepper                                   

seasoning:

   2 tbsp. paprika                                                         
   1 tbsp. onion powder
   1 tbsp. garlic powder                                               
   2 tsp. sugar
   1 tsp. chilli powder                                      
   ¼ cup oil
   2 tsp. black pepper

BBQ sauce:

   2 tbsp. oil                                                     
   1 small onion, finely chopped
   4 cloves garlic, crushed                               
   ½ tsp. red pepper flakes
   1 tbsp. paprika                                                         
   1 ½ cups tomato sauce
   ½ cup beer                                                   
   ¼ cup cider vinegar
   1/3 cup packed brown sugar                        
   2 tbsp. Dijon mustard
   1/3 cup Worcestershire sauce                                  
   salt and pepper        



Mix seasoning ingredients together and rub it all over the beef. Put beef in a glass dish. Cover and refrigerate overnight.                       

In a small saucepan over medium heat, heat 2 tbsp. oil until hot and cook onion, garlic and chilli flakes together for 5 minutes. Add remaining sauce ingredients together with ¼ cup water and bring mixture to a boil, stirring as it cooks. Reduce heat and simmer sauce for 20 minutes, or until it is slightly thickened.  Add salt and pepper to taste and let it cool.

Preheat barbeque to medium indirect heat and oil the grill. Put the beef in the middle of the barbeque and cook, covered, for 40 minutes for rare beef. Roast for 10 minutes more for medium.

10 minutes before cooking is completed, brush BBQ sauce all over the beef. Cover BBQ to continue cooking. Remove meat from BBQ, cover loosely with a piece of foil and let it rest for 10 minutes. Carve beef and serve it with the remaining sauce.
