VEGETABLES: At harvest time or any time in the year, you might enjoy trying out this simpe recipe to cook squash or pumpkin.



SAVOURY SQUASH RINGS:

 

 

 
2 medium-sized squash or pumpkin                                   

¼ cup butter

½ cup thinly-sliced onion                                           

1 ½ tsp. salt

freshly ground black pepper                                       

½ tsp. basil

1 cup sour cream or plain yogurt                                

¼ cup mayonnaise

 

 

 

Preheat oven to 350 degrees F.  Cut squash into ½-inch-thick rings. Peel and remove seeds. Spread squash rings in a large buttered baking pan and sprinkle salt, pepper and basil over them. Cover pan with foil. Bake 20 to 30 minutes or until tender.

 

In a saucepan over medium heat, melt butter and cook onion until soft. Mix together sour cream/ yogurt and mayonnaise, add to pan and heat through.

 

Spoon  sauce over squash to serve.
