VEGETABLES: This is another way to turn zucchini into a satisfying vegetarian dish.



ZUCCHINI AND CHEESE GRATIN:

 

 

 

5 large zucchini, trimmed and washed

5oz. mozzarella cheese, cut into small cubes                      

4 tbsp. olive oil

1 large red onion, thinly sliced                        

5 eggs, well beaten

6 tbsp. freshly gated parmesan cheese            

2 tbsp. chopped Italian parsley

salt and pepper                                                           

3 tbsp. fresh dry breadcrumbs            

 

 

 

Preheat oven to 350 degrees F., and oil a large baking pan.

 

Cut zucchini into cubes. Heat oil in skillet over medium-high heat until hot and cook onions for 2-3 minutes until soft. Add zucchini and cook gently until softened, turning frequently, 4-5 minutes.

 

Scatter a layer of zucchini and onion in the prepared pan. Cover it with a thin layer of eggs; then sprinkle parmesan cheese, mozzarella and a little parsley over the top. Add salt and pepper to taste. Repeat this layering process until all the ingredients have been used, making sure the top is covered with a beaten egg & cheese layer. Sprinkle breadcrumbs over the top.

 

Bake 30 minutes, or until well browned and crisp.
