MARINADES: Here are 2 of my favourite recipes to use on lamb. Hope you'll like them too.




ARMENIAN HERB MARINADE FOR LAMB:

 

 

 

3-4 lbs. lamb, any cut

½ cup each olive oil + tomato juice

½ cup finely-chopped onion                           

¼ cup lemon juice

¼ cup snipped parsley                                    

1 clove garlic, minced

1 tsp. each salt, dried marjoram & dried thyme, crushed                                

½ tsp. pepper

 

 

 

Combine all ingredients, either in a large glass dish or a large plastic leak-proof bag with ties, and add lamb, turning lamb or bag over a couple of times to coat all sides. This makes 1 ¾ cups of marinade.. Marinate in refrigerator for at least 6 hours









SPICE MARINADE:

 

 
 

1 cup wine vinegar                                         

1 onion, chopped

8 whole cloves                                                

2 sprigs fresh mint or 1 tsp. dried

2 cloves garlic, crushed                                  

3 sprigs fresh or 1tsp. dried parsley

¼ tsp. each dried thyme & dried tarragon

1 tsp. grated lemon rind                                  

2 tsp. salt

 

 

 
Combine ingredients and use it for lamb.
