TOMATO SALSA:
4 ripe tomatoes, finely diced
¼ cup finely chopped red onion
½ cup chopped coriander leaves
1 tbsp. lime juice
salt and pepper
Combine tomatoes, onion, coriander, lime juice, salt
and pepper to taste in a glass bowl. Cover with plastic wrap and refrigerate.
Remove salsa at least 15 minutes before serving so
that ingredients have time to return to room temperature and their full
flavour.
