PORK: Another simple but delicious recipe.

ROAST PORK WITH GINGER MARINADE:


 5 lb. pork roast                                                           


marinade:

   5 tbsp. soy sauce                                         

   2 tsp. grated fresh ginger

   8 tbsp. hoi sin sauce                                    

   3 tbsp. dry sherry

   3 tbsp. honey

Place the pork in a large re-sealable plastic bag. Combine marinade ingredients and pour it over roast. Sit bag on a plate and refrigerate, turning occasionally, for 2-4 hours or longer.


Preheat oven to 475 degrees F. Remove pork from plastic bag, reserve marinade, and place it in a roasting pan. Roast for 15 minutes to brown, and then reduce heat to 350 degrees F.  Continue roasting, basting with the marinade, for about 2-2 ½ hours, or until the internal temperature reaches 155 degrees F. Add a little water to the roasting pan as necessary to prevent burning.


Rest roast rest for 10 to 15 minutes before serving to arrive at an internal temperature of 160 degree F. Slice meat to serve.
