SPARE-RIBS WITH BBQ SAUCE:
4 lbs spare ribs or baby back ribs
2 tsp salt
1 large onion, chopped
½ cup chopped celery
½ tsp fresh-ground pepper
BBQ sauce:
2 tbsp. brown sugar
1 tbsp. Worcestershire sauce
1/2 cup orange juice
1/8 tsp cayenne pepper
3 tbsp. oil
2 tbsp. lemon juice
½ cup ketchup
1 tsp. mustard
Preheat oven to 400 degrees F. Rub ribs with the salt and pepper and arrange ribs on a rack in a large baking pan. Bake for 10 minutes.
Meanwhile, cook onion and celery in a saucepan over medium heat until softened. Add in BBQ sauce ingredients, mix well and bring mixture to a boil. Reduce heat and simmer sauce for 5 minutes.
Reduce oven to 350 degrees. Brush BBQ sauce repeatedly over the ribs and return pan to oven. Bake ribs for 30-40 minutes more, basting heavily with sauce every 10 minutes.
Carve ribs and serve with sauce.
