BREADED PORK CHOPS WITH APPLE SAUCE:
4 boneless pork chops
4 tbsp. honey
¼ cup flour
2 eggs, beaten
1 cup bread crumbs
salt and pepper
2-3 tbsp. cooking oil
½ -1 cup apple sauce***
dash cinnamon, optional
Flatten pork chops with a mallet or the back of the cleaver and spread honey on both sides of the chops. Season chops with salt and pepper to taste. Dredge each chop with flour, and dip into egg, and then in bread crumbs.
Heat oil in a large heavy non-stick skillet over medium-high heat until very hot and sauté pork chops for about 3-4 minutes on each side. Check for doneness by using a sharp knife to make a small slash in the flesh. If juice runs out clear and the meat is no longer pink, the chop is cooked. Do not overcook.
Transfer pork chops to heated serving plate. Spread apple sauce over chops and sprinkle with cinnamon, if using, to serve. Alternately, serve pork chops with apple sauce on the side.
***Apple Sauce:
4 large apples, peeled, cored and sliced
sugar to taste
1 tbsp. butter
Place apples in a saucepan with barely enough water to cover and bring mixture to a boil over high heat. Reduce heat and simmer apples for 5 minutes or until soft. Transfer apple pieces to a blender and reserve cooking liquid. Puree apples, adding as little of cooking liquid as needed to blend into a smooth thick sauce. Add sugar to taste and the butter.
