MIX SAUSAGES WITH CABBAGE, ONIONS AND APPLES:
4 each of weisswurst, bratwurst and knackwurst
sausages
2 large red onions, sliced
2 large apples, cored and sliced
1 lb. red cabbage cut into small wedges
3-4 tbsp. cooking oil
1 tsp. caraway seeds, optional
salt and pepper
Bring a large pot of water to a boil. Prick sausages
with a sharp knife and cook them in boiling water for 4 minutes. Remove and
drain them on paper towels. Add cabbage to the water and cook them until soft.
Drain well.
Heat 1 tbsp. oil in a heavy non-stick skillet over
medium-high heat until hot and cook onions until it begins to soften. Add
apples, cover and cook over low heat until apple is soft. Add cabbage, salt and
pepper to taste and caraway seeds. Cook mixture for 1-2 minutes or until heated
through. Transfer mixture to a serving platter to keep warm.
Rinse and dry skillet and return it to medium-high
heat on stove. Heat 2 tbsp. oil until very hot and cook sausages, in batches, until
they are well-brown on both sides.
Transfer sausages to the bed of cabbage mixture on serving platter to serve
