BLUEBERRY MUFFINS:
dry ingredients:
1 ¾ cups all
purpose flour
¾ tsp. salt
2½ tsp.
baking powder
1/3 cup
sugar
liquid ingredients:
¼ cup
butter, melted
1 egg, well
beaten
¾ cup milk
1 tsp.
grated lemon peel
¾ to1 cup fresh
or frozen blueberries
1/3 cup
cooking oil
2 tbsp. sugar
melted butter
Preheat oven to 400 degrees F. Grease 12 muffin cups
or line them with paper cups.
Sift dry ingredients together into a large bowl and make
a well in the center of mixture.
Beat egg, milk and cooking oil together; then add it all
at once to dry ingredients. Mix blueberries with 2 tbsp. sugar and the grated
rind; then gently fold into batter. Stir all ingredients together until just
combined. Fill prepared cups 2/3 full with batter.
Bake for 20 to 25 minutes or until tested done. While
muffins are warm, brush them with melted butter.
