OTHER CAKES: This is a sweet and tangy treat that is good to be added into lunch boxes, or to be enjoyed at any time.



LEMON SQUARES

 

 

 

crust:

    1 cup all purpose flour                   
    ½ cup butter, cut into small cubes
    ¼ cup sugar                                    
    pinch of salt

topping:

    2 eggs                                                         
    ½ cup sugar
    ½ tsp. baking powder                                  
    2 tbsp. all purpose flour                  
    2 tbsp. lemon juice + 1 tbsp orange juice                

 

 


Preheat oven to 350 degrees F.

 

Sift flour and sugar together. Blend butter, using a pastry cutter, into the flour mixture until the mixture resembles coarse meal. Pat the mixture into an 8-inch square baking pan.  Bake for 12 to 15 minutes, or until pale golden.

 

Beat eggs and sugar together until light and lemony-coloured. Add juices and beat mixture for 8 minutes. Sift flour and baking powder together and add to egg mixture, stirring well to combine.  Pour mixture into the partially-cooked pastry case and return it to oven.

 
Bake for 20 minutes, or until golden and tested done
