OTHER CAKES: This traditional French treat can be easily produced at home. It is a wonderful snack to add to the children's lunch boxes



MADELEINES:

 

 

 

1 cup self-raising flour (if using all purpose flour, add 1 tsp. baking powder)

½ cup sugar                                                    

4 eggs

½ cup butter, melted                                       

pinch of salt

½ cup ground almonds                                   

¼ tsp. vanilla extract

 

 

 

 
Preheat oven to 375 degrees F. Grease Madeleine pans or small muffin cups. 

 

Beat eggs and sugar together until thick and mousse-like.  Sift flour and salt together and add into egg mixture. Fold in gently. Add melted butter and ground almonds.

 

Fill prepared pans with batter. Bake 10 to 15 minutes or until golden.  Remove from moulds and cool on rack.
