CAKES MADE WITH YELLOW SPONGE CAKE: This is a good way to utilize the basic yellow sponge cake. It is light & delicious, especially in the summer months when berries are ripe and plentiful in supply.



CAKE WITH MASCARONE CHEESE & BERRIES:

 

 

 

 

yellow sponge cake (see posted recipe), cut into 3 layers

1/2 cup each fresh sliced strawberries, raspberries, & blue berries

2 cups whipping cream

8 oz mascarpone cheese

1/2 cup powdered sugar

simple syrup--make with 1/4 cup sugar dissolved in 1/4 cup boiling water  + 1/4 cup cold water

 

 

 

 
Combine berries with sugar to taste. Let stand for 1 hour.

 

Transfer mascarpone cheese to a large bowl. In another bowl, whip cream until soft peaks. Fold half of whipped cream into cheese, together with powdered sugar to taste.

 

Place 1 layer of sponge cake on bottom of pan and brush with syrup. Spread 1/3 cheese/cream mixture on sponge; followed by half of fruit mixture. Repeat with 2nd layer of sponge cake, brushing with syrup, then adding cream and cheese mixture and fruits. Top this with the 3rd sponge cake, brush it with syrup and top it with cream & cheese mixture. Dust whole thing with  grated chocolates. Refrigerate until use.
