CHEESE CAKES: This is one of my most favourite cheese cake recipes. Hope you'll like it too.



AMARETTO CHEESE CAKE:

 

 

 

basic cookie dough crust; see posted recipe

fillings:

    3 pkgs. cream cheese, softened                  
    ¾ cup sugar
    2 tbsp. all purpose flour                              
    3 eggs
    ¾ cups sour cream                                      
    ¼ cup Amaretto liqueur

glaze:

    ½ cup apricot jam                                       
    1 tbsp. Amaretto liqueur

 

 

 

Preheat oven to 375 degrees F.  Roll out crust pastry to ¼- thickness to fit a 9-10-inch spring-form baking pan. Bake crust blind (see basic recipe) for 12 minutes. Remove from oven, set aside.

 

Increase oven temperature to 450 degrees F. Beat cheese with sugar until fluffy. Add eggs one at a time; beating well after each addition. Add flour, liqueur and sour cream. Beat well to mix in.

 

Pour cheese mixture into prepared half-baked crust. Bake for 10 minutes. Reduce oven temperature to 350 degrees F. and continue baking 30-40 minutes, or until set. Remove from oven and set cake on a rack to cool.

 

Combine glaze ingredients in small saucepan, cook over medium heat until warm and smooth. Strain mixture and pour it over cheese cake.

 

Chill at least 3 hours before serving.
