YEASTLESS BREAD: Here are 2 more recipes in my yeastless bread collection.



PUMKIN BREAD:

 

 

 

dry ingredients:

 

    1 ¾ cups all purpose flour                                      

    1 tsp. baking soda

    ¼ tsp. baking powder                                                          

    ¾ tsp. salt

    1 cup sugar

 

1 cup canned pumpkin

 

spice mix for pumkin :

 

    ½ tsp. freshly ground nutmeg                                             

    ½ tsp. cinnamon

    pinch of ground clove                                                        

 

2 eggs, slightly beaten                                                                         

 

1/3 cup vegetable oil

 

¼ cup water                                                                

 

½ cup each chopped dates & chopped nuts

 

 

 

 

 

Preheat oven to 325 degrees F. Grease and flour a 9 x 5 inch loaf-pan.  

 

Combine dry ingredients and stir with a fork to mix well.  Stir eggs together with oil, water, pumpkin and the spice mix. Add this mixture into dry ingredients together with dates and nuts. Stir until well mixed.  Pour into prepared pan.

 

Bake about 80 minutes or until tested done. Cool on rack before serving.
 
 
 
 
 
 
ZUCCHINI LOAF:
 
 
 
dry ingredients:
    3 cups all purpose flour
    2 tsp. each baking soda, ground cinnamon & cocoa                                                           
    ¼ tsp. salt
3 eggs                                                             
1 cup vegetable oil
2 cups grated unpeeled zucchini
1 cup sugar or to taste
3 tsp. vanilla extract                                                                                        
1 cup chopped walnuts
 
 
 

Preheat oven to 325 degrees F.  Grease two 8 x 4-inch loaf pans.
 
Combine eggs, oil and sugar in bowl.  Stir in zucchini and vanilla.  Sift dry ingredients together and add, a little at a time, into egg mixture. Fold in walnuts.  Divide batter equally between the prepared pans.
 
Bake for about 1 hour or until tested done.
