CHINESE COOKING: Salted eggs are very useful as an ingredient in many Chinese dishes. Making them at home is a great and easy way to ensure they are freshly made and have no chemicals added..


HOW TO MAKE SALTED EGGS:

 

 

 



2 cups salt                                                                     

8 cups water

24 duck eggs or chicken eggs if duck eggs are unavailable

 

 

 

Bring water to the boil and dissolve salt completely. Put brine in a large jar or container with lid. Cool brine to room temperature. Load eggs into brine carefully, making sure they are completely submerged.

 

Marinade for 4 to 5 weeks, eggs are ready when they float to the surface.
