CHINESE DESSERTS: Mango pudding is a popular dessert that is served after a banquet-type meal in the restaurant. It can be easilly reproduced at home.


MANGO PUDDING芒果布甸:

 

 


2 ripe mangoes                                                           

1 ½ tbsp. unflavoured gelatine

4 oz. sugar                                                                  

1 ½ cups hot water

1 cup milk                                                                  

2 egg yolks

 

 

 


Peel and remove stones from mangoes. Dice the flesh of one mango; then blend the flesh of another with a little milk into puree.

 

Put hot water in a bowl sitting in a pan of simmering water. Sprinkle in gelatine, stirring to dissolve. When gelatine is completely dissolved, add in sugar, stirring to dissolve.

 

Beat egg yolks in a bowl and gradually add in milk. Then add in gelatine mixture and the mango puree and diced mango. Mix well; then pour mixture into moulds. Refrigerate until set.
