CHINESE SNACKS: These sesame seeds coated dough-balls are as popular a snack today as they were in my days as a youth n Hong kong.


LAUGHING DOUNUTS 笑口棗

 

 

 

 

1 ½ cups all purpose flour                                          

2 tsp. baking powder

1/3 cup sugar                                                              

1 tbsp. lard or vegetable shortening, melted

6 tbsp. cold water                                                       

1 cup white sesame seeds

cooking oil for deep-frying

 

 

 

Sift flour and baking powder together into a large bowl. Add lard and sugar and mix in well. Add enough water to mix into soft dough. Knead dough a few times; then set aside for 30 minutes.

 

Roll dough by hand into a long rope and cut rope into 24 pieces.  Roll each piece into a ball. Dampen each ball with water; then roll in white sesame seeds to coat thoroughly.

 

In wok or large saucepan, heat enough oil for deep frying over high heat until very hot. Remove pan from heat then carefully drop in dough balls. Return pan to medium-high heat and deep-fry doughnuts, turning them over and over with a ladle during cooking, until they burst open and turn golden-brown.

 

Remove and drain on paper towels. Cool before serving.
