CHINESE SWEET SOUPS: This is another favourite sweet soup that is served both in eateries and at home. It would be rewarding to make it at home.


BLACK SESAME SEEDS SWEET SOUP 芝麻糊

 

 

 

5 oz. black sesame seeds                                            

4 tbsp. rice

8 oz. cane sugar bricks                                               

6 cups water

 

 

 

Rinse black sesame seeds thoroughly and drain. Let stand overnight to dry; then toast seeds in a clean dry wok over low heat.

 

Rinse rice; then soak in 1 cup water for 2 hours. Blend in blender, then strain and set aside.

 

Blend sesame seeds with 1½ cups water until smooth; then strain through a fine strainer. If a fine-mesh strainer is not available, blend it a second time and strain again.

 

In saucepan, bring 3 ½ cups water to a boil and add sugar. Cook over low heat, stirring to dissolve sugar. Add in sesame mixture and cook, stirring, for 2-3 minutes. Add in rice solution and cook until mixture thickens.  Serve right away.
