CHINESE SWEET SOUPS: This is easy to make and delicious to serve at home, especially after a hearty Chinese meal.


WATER CHESTNUT SWEET SOUP 馬蹄露:

 

 

 

 

1 lb. water chestnuts, either peeled fresh ones, or canned                                          

5 cups water

8 oz. sugar                                                                  

2 tbsp. water chestnut flour

2 eggs, beaten                                                 

 

 

 

 
Grate or chop water chestnuts finely.

 

In saucepan, bring water to a boil and add sugar. Cook over low heat, stirring continuously to dissolve sugar. Add water chestnuts and bring mixture back to boil, removing foam as it rises to the top.

 

Mix water chestnut flour with 2 tbsp. water and add this into the liquid in pan. Cook, stirring continuously, until sweet soup is thickened and smooth.

 

Add in beaten egg in a steady stream and cook, stirring continuously, for 30 seconds more. Serve hot or cold.
