FRY TARO BALLS香芋球:
¾ lb.
taro****
½
large carrot
cooking
oil
seasoning:
½ cup chopped fresh coriander
½ tsp. white pepper
1 ½ tbsp. sugar
1 tsp. each salt & light soy sauce
2/3 cup all purpose flour + ¼ tsp. baking soda
cold water
****Taro
is a root vegetable that is available from Chinese supermarket****.
Peel
carrots and taro and finely shred them into a large bowl. Add in seasoning
ingredients and just enough water to make a sticky paste that binds the vegetables
together.
In a
heavy saucepan over high heat, heat enough oil for deep-frying until very hot.
Use a tablespoon to scoop up taro and carrot mixture and drop them into hot
oil. Cook until golden brown. Drain on paper towels before serving.
Cool,
strain and save oil for other uses.
