COOKIES: This is rather a spectacular way to make home-made cookies using the "wafer" type of dough. It takes patience and practise to make perfect, but I think you will enjoy the end result of your labour.



COOKIES: CIGARETTES RUSSES:

 

 

 


2 large egg whites                                           

½ cup superfine sugar

1/3 cup butter, melted                                     

1 tsp. vanilla extract

½ cup all purpose flour

 

 

 

 
Preheat oven to 375 degrees F. Grease and flour 2 baking sheets or line them with silicon paper.

 

In a medium bowl, beat egg whites with sugar until smooth & foamy. Add butter and vanilla. Mix in flour.

 

Drop dough by the teaspoonful onto prepared baking sheet. Using a knife to spread mixture thinly and evenly to form a circle roughly 4-inches in diameter. Make only 2  cookies for each batch of baking as they need to be rolled while warm and it is difficult to handle more than 2 at a time. Bake for 5-6 minutes or until golden brown.

 

Use a spatula to remove cookie from baking sheet. Roll cookie immediately around handle of a wooden spoon. Cigarettes will firm up fairly quickly so one has to work fast.  Remove from handle and cool on rack until crisp.

 

Repeat procedure with rest of dough.
