APPLE HONEY CRUMBLE
6 to 7 medium-sized apples, peeled, cored and sliced.
½ cup blueberries
½ cup each sour cream & honey
2 tbsp. cornstarch
grated rind of 1 lemon
crisp topping:
1/3 cup
butter
½ cup each rolled
oats & whole wheat or all purpose flour
1/3 cup each
brown sugar & chopped walnuts
Preheat oven to 350 degrees F. Grease a 2-quart baking dish.
In large bowl, combine sour cream, cornstarch, lemon
rind and honey until well blended. Stir in apples and blueberries and mix well.
Turn mixture into prepared baking dish.
In a food processor, pulse all purpose or wheat flour
together to mix. Add butter and process with on/off pulses until butter is the
size of very small peas. Pour into a bowl and stir in oats, sugar and chopped
walnuts. Mix well then sprinkle crumble-mixture over top of apples.
