BREAD AND BUTTER PUDDING:
3 eggs
½ cup sugar
1 tsp. vanilla extract
pinch salt
3 ½ to 4 cups milk
10 to12 slices white bread
½ cup raisins
1 tsp cinnamon
Beat eggs, sugar, salt and vanilla extract together in
a large bowl. Add milk and stir well to mix. Strain mixture into a large jug.
Butter one side of each slice of bread, remove crusts
and cut into triangles. Butter a large glass baking dish with lid and arrange
bread triangles in single layer in the dish. Sprinkle in raisins and cinnamon.
Pour milk mixture over bread and let soak for 30 minutes before baking.
Preheat oven to 350 degrees F. Bake pudding, covered, for 30 minutes. Raise
heat to 400 degrees, remove lid and bake 30 minutes more, or until puffed and
golden.
