COOKIES: Wafers are a treat because they are light and delicious. This is a version of almond wafers that you might like.


COOKIES: ALMOND WAFERS

 

 

 

 
2 cups flour

½ cup ground almonds                                                           

½ cup each shortening &  butter

2/3 cup icing sugar                                          

2 eggs

1 tbsp Amaretto liqueur                                  

1 tsp vanilla
                                
½ tsp salt

 

 

 

Use a hand-held electric beater to cream butter, shortening and icing sugar together in a large bowl, until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in Amaretto and vanilla.

 

Stir together flour and salt and gradually blend into creamed mixture. Stir in almonds. Grease baking sheets and preheat oven to 375 Degrees F.

 

Drop dough by teaspoon on baking sheets and spread into circles. Press out circles very thinly with the bottom of a 2- 2 ¼” drinking glass that has been dipped in cold water.

 

Bake wafers for 8 minutes, or until lightly browned around the edges. Remove and cool on rack.
