AFTERNOON TEA: This is a nice sandwich to serve for tea time.



HAM & AVOCADO SANDWICHES:






200 gm Virginia or Black Forest ham                         

1-2 ripe avocados

¼ cup soft butter                                                         

1 tbsp Dijon mustard

1 tbsp chopped parsley                                               

fresh grind black pepper

bread, crust for , for sandwiches







Mix butter, Dijon mustard, black pepper & parsley together. Spread mixture on 1 side of 2 slices of bread. Top with ham slice.



Cut avocado in half, peel & remove stone. Brush avocado halves with lemon juice. Turn avocado, flat side down, on a cutting board & slice into thin slices. Pat down slightly to fan out slices then transfer whole cut half onto the ham & bread. Top with the other piece of bread, patting it slightly before cutting diagonally into 2 triangles to serve.
