WARM
MUSHROOM CROSTINI:
2
cups assorted mushrooms of choice
4
tbsp. olive oil
1
tbsp. butter
2
slices smoke bacon, diced
1
small onion, diced
2
cloves garlic, minced
2
tbsp. Italian parsley
2
tbsp. grated Parmesan cheese
salt
and pepper
8-10
slices French bread, ¼-inch thick
In a
large saucepan, melt butter in 2 tbsp. olive oil over medium-high heat to cook bacon, onion
and garlic for a few minutes until onion is softened. Chop mushrooms coarsely and add into
onion mixture. Cook 5-6 minutes more. Add salt and pepper to taste; then stir
in parsley and cheese. Remove from heat and cover pot for 4-5 minutes.
Toast
bread and drizzle each piece with a little olive oil.
To
serve, spoon mushroom mixture over the toasts, and serve 2 slices per person.
