STARTER: Shrimp is a very versatile ingredient that can be used to turn out many delicious dishes, including this one.



SHRIMP PATE:





1 lb. cooked shrimp                                        

1 x 250gm pkg. cream cheese, softened

½ cup home-made mayonnaise                                  

2 tbsp. lemon juice

1 tsp. chilli sauce                                            

1 tbsp. grated horseradish

½ tsp. salt                                                        

white pepper

1 stalk green onion, minced                            

2 hard-boiled eggs







Place shrimp in food processor fitted with steel blade and process until chopped.



Beat cream cheese with a hand mixer until smooth. Add shrimp and the rest of ingredients and mix in well. Return mixture to food processor and process together until pureed.



Mould mixture onto a serving platter. Refrigerate until serving time. Serve with toast squares or crackers.








HOME MADE MAYONNAISE:



1 egg yolk

½ tsp. Dijonmustard

2/3 cup olive oil & sunflower oil mixed

1 tbsp. lemon juice

salt and white pepper to taste




In a large bowl, and using a wire whisk, beat together egg yolk, mustard, salt and pepper. Add in oil mixture drop by drop, beating thoroughly between additions. As mayonnaise thickens, increase the flow of oil to a steady stream, beating constantly. Beat in lemon juice and salt and pepper to taste, check and adjust seasoning if necessary.
