APPETIZER: There are many nice reipes for stuffed or "devilled" eggs. Hope you will give this one a try.



EGGS STUFFED WITH PARMESAN CHEESE:





6 hard-boiled eggs                                                      

4 tbsp. butter, softened

½ cup freshly grated Parmesan cheese            

¾ tsp. dried oregano

¾ tsp. dry mustard                                                      

½ tsp. sweet paprika

salt to taste






Peel hard-boiled eggs and cut into halves lengthwise and remove the yolks while reserving the white portions.  Force the yolks through a sieve into a bowl. Blend in butter, grated cheese, oregano, dry mustard, ¼ tsp. paprika and salt to taste.



Transfer egg yolk mixture to a pastry bag fitted with a large fluted tip. Pipe mixture decoratively into the reserved eggs.



Sprinkle with rest of paprika to serve.
