SMOKED
SALMON WITH FRESH FRUIT SALAD:

small papaya, or 2 small mangoes
2
ripe avocados
watercress
slices of smoked salmon
lemon
juice
dressing:
2 tbsp. olive oil
3 tbsp. lime juice
½ cup orange juice
2 tbsp. sugar
the pulp of 3 passion fruit
freshly ground black pepper
Peel,
seed and cut papaya into thick slices.
Peel, stone and cut avocados into thick slices and brush slices with
lemon juice. Arrange papaya and avocado slices alternately on each chilled
serving plate. Place salmon attractively next to fruit slices and garnish dish
with watercress.
Put
dressing ingredients in a glass jar with tight-fitting lid. Shake well to
combine.
Pour
dressing over salad to serve.
