APPETIZER: Another simple appetizer that never failed to please in my family.

HUMMUS:

1 can (19 oz) or 2 cups pick peas

1 ½ to 2 tbsp. tahini or sesame seed paste

2 tbsp. each olive oil  & lemon juice

2 cloves garlic

seasoning:

½ tsp salt & sugar or to taste
    white pepper

Drain chick peas and reserve liquid. Put chick peas, olive oil, sesame seed paste, garlic and lemon juice in the work bowl of food processor with blade attached, or into the blender. Process/blend until mixture is thick. Add enough reserved liquid into mixture to make into desired consistence. Add seasoning to taste; and process/blend until fine.

Transfer hummus to glass jar and store in refrigerator until needed. Serve humus on warm pita bread, crackers or bread of choice.
