SALMON
CARPACCIO:
10 oz.
very fresh salmon fillet
2
tbsp. chopped coriander leaves
2
plum tomatoes, skinned and diced
1
ripe avocado, finely diced
4
tbsp. extra virgin olive oil
1
tbsp. lime juice
salt
and pepper
seasoning:
1 tsp. grated lime zest
½ cup lime juice
2 fresh chillies, thinly sliced
1 small red onion, finely chopped
1 tsp. salt
Trim
salmon and check for bones, remove bones with tweezers if necessary. Cut salmon
into 12 thin slices. Lay slices between
2 pieces of plastic wrap. Flatter slightly, using a small rolling pin or meat
mallet, until slices are thin and even.
Divide slices between 4 serving plates.
Whisk
seasoning ingredients together and divide mixture between the four plates,
spreading it evenly over the salmon. Cover and marinade for 30 minutes.
