STARTER: Suceess of this delicious first course is dependent on freshness, especially of the fish, of all the ingredients.



SALMON CARPACCIO:





10 oz. very fresh salmon fillet                                    

2 tbsp. chopped coriander leaves

2 plum tomatoes, skinned and diced                           

1 ripe avocado, finely diced

4 tbsp. extra virgin olive oil    

1 tbsp. lime juice                                

salt and pepper           

seasoning:

    1 tsp. grated lime zest                                             
    ½ cup lime juice
    2 fresh chillies, thinly sliced                                   
    1 small red onion, finely chopped
    1 tsp. salt





Trim salmon and check for bones, remove bones with tweezers if necessary. Cut salmon into 12 thin slices.  Lay slices between 2 pieces of plastic wrap. Flatter slightly, using a small rolling pin or meat mallet, until slices are thin and even.  Divide slices between 4 serving plates.



Whisk seasoning ingredients together and divide mixture between the four plates, spreading it evenly over the salmon. Cover and marinade for 30 minutes.


When ready to serve, season tomatoes and avocado with a little salt and pepper and toss with 1 tbsp lime juice and the olive oil. Scrape seasoning off from salmon if preferred; and top each serving with the tomato/avocado mixture. Serve immediately, garnished with chopped coriander.
