DESSERTS: Baked custard is a delicious pudding that is easy to put together. Adding nectarin, when in season, to the pudding greatly enhances its flavour.


BAKED NECTARIN CUSTARD:

 

 

 

4 (about 1 lb) nectarines, sliced                                              

1/3 cup plus 1 tbsp sugar

3 cups milk                                                                             

4 eggs

1 tsp vanilla extract                                                                 

1/8 tsp. each salt & nutmeg

 

 

 
Preheat oven to 325 degrees F.  Grease a 6-cup baking dish.

 

Toss nectarines with 1 tbsp. sugar and arrange them in the bottom of the prepared baking dish.

 

Mix egg yolks with sugar in a saucepan. Scald milk until almost boiling and pour hot milk gradually into eggs mixture, whisking to mix well. Add vanilla, nutmeg and salt. Pour mixture over the nectarines in the baking dish. 

 

Put baking dish in a large baking pan. Pour enough boiling water into pan to come to one inch from the top of the baking dish.  Bake for 1 hour or until knife inserted in centre comes out clear. Serve hot or cold.
