DESSERTS: Frozen ices or slushies made with wine is a marvellous way to cool down on a summer day. Please try out this version of it.


WINE GRANITE--WINE ICE:

 

 

 

1 ¼ cup Cabernet Sauvignon wine                              

1 ¾ cup stock syrup, recipe below

 

 

 

Mix the wine and the stock syrup together and pour it into a flat tray. Place tray in the coldest part of the freezer. Take tray out and stir liquid every 45 minutes until ice crystal begin to form around the edges. Scrape crystals into the middle and return tray to freezer.

 

Check and stir every 30 minutes from now on until the mixture freezes to an ice mush. It is then ready to be served.

 

Place granite into wine glasses to serve, garnish with a bunch of black grapes and wedges of fresh fruits.

 

 

 

stock Syrup:

    1 cup sugar                                                 
    2 cups water
    ½ cinnamon stick                                        
    zest of ½ lemon
    juice and zest of 1 orange

 

 

 
Bring ingredients to a boil in a saucepan. Skim. Simmer 15 minutes. Strain through a fine strainer and cool before using.
