DESSERTS: This is another example of enhancing the idea of using fruit as dessert. Ripe peaches in the summertime are delicious when treated with organge liqueur that makes its sweetness stand out.


PEACH COMPOTE:

 

 

 



1 ½ lbs. ripe peaches                                                              

1 tsp. fresh lemon juice                                              

¼ cup fresh orange juice                                                         

3 tbsp. each honey & Cointreau or other orange-flavoured liqueur                

1 tsp. freshly grated ginger

 

 

 


Dip peaches in rapidly boiling water for 20-30 seconds. The riper the fruit, the shorter the time needed. Cool until comfortable to handle, then peel skin off peaches. Pit and thinly slice peaches and add lemon juice to coat. Put peaches in a heatproof bowl and set aside.

 

In a small saucepan placed over medium heat, combine orange juice, Cointreau, honey and grated ginger. Bring to a boil and cook for 1 minute. Pour syrup over peaches and stir well to combine. Allow to cool for 30 minutes. Cover with plastic wrap and refrigerate until ready to use.
