DESSERTS: If you enjoy liqueur in your dessert(s), you will be delighted with this version of "syllabub" which is light and delicious.


SYLLABUB:

 

 

 

 

¾ cup superfine sugar                                                 

½ cup Madeira wine

¼ cup cognac                                                              

grated rind and juice of 1 lemon

2 cups whipping cream                                               

lady fingers

 

 

 


Whisk sugar, Madeira wine and cognac together. Add lemon rind and juice and mix in well. 

 

In another bowl, whip cream until soft peaks form. Add sugar and wine mixture into cream in a steady stream and continue whisking during addition.  Beat until very thick.

 

Divide syllabub among wine glasses and chill for 2 to 3 hours. Serve syllabub with lady fingers.
