DESSERTS: Clafouti is a puddy-like dessert that can be made ahead without fuss. Here is 1 example of it to enhance your next dinner party.



BLACK CHERRY CLAFOUTI:

 

 

 

2 eggs                                                             

¼ cup sugar

½ cup all purpose flour                                   

1 ¼ cups milk

2 tbsp. melted butter                                       

pinch salt

1 tbsp. brandy                                                 

1 x 14-oz. can pitted black cherries

sugar to dust                                                   

whipped cream

 

 

 


Preheat oven to 400 degrees F.  Grease a shallow baking dish about 9-inch in diameter.

 

Beat eggs and sugar together until foamy. Beat in flour, milk, melted butter, salt and brandy.

 

Drain cherries and arrange in baking dish. Pour batter over it. Bake for 20 minutes. Lower heat to 375 degrees F and continue cooking until puffed and lightly browned, about 20 minutes more.

 

Remove from over, sprinkle with sugar and served with whipped cream.
