SALADS: I love this delicious salad which is a breeze to whip up.



MANDARIN SHRIMP SALAD




 

1½ cups freshly cooked and cooled baby shrimp                                                 

1/3 cup chopped celery

1 cup canned mandarin oranges, drained                                

½ cup mayonnaise                  

1 cup fresh or canned pineapple cubes                                   

½ tsp curry powder

¾ cup each of cantaloupe and honeydew melon cubes          

alfalfa sprouts

lettuce leaves





Combine shrimp, mandarin oranges, celery, pineapple, cantaloupe and honeydew melon in a large bowl. Add curry powder to the mayonnaise and mix in. Add dressing to the shrimp mixture and toss to coat all the ingredients.


Line 4 serving plate with lettuce leaves. Top with shrimp mixture and garnish with alfalfa sprouts.
