SALADS: With mangoes being always available nowadays, it is easy to enjoy this simple salad.



MANGO SALAD:







2 ripe mangoes                                                                       

½ cup fresh mint leaves, coarsely chopped                

2 red peppers, cut into strips

½ small red onion, finely chopped                             

½ cup coarsely chopped cilantro        

2 tbsp. coarsely chopped roasted peanuts, omit if peanut allergic                   

salt to taste

dressing:

    1 tbsp. each fish sauce & sugar
    ½ tsp. red pepper flakes                              
    2 tbsp. lime juice

Boston lettuce to garnish






Mix dressing ingredients together, stirring well to dissolve sugar.


Peel and stone mangoes and cut flesh into bite-sized strips. Combine mangoes with red pepper strips, onion, mint and half of cilantro leaves. Add dressing, tossing together well to mix. Taste and adjust seasoning, adding a little more lime juice or salt to taste if needed. Let salad stand for 1 hour at room temperature.


Spoon salad mixture onto lettuce leaves. Sprinkle with remaining cilantro and the chopped peanuts, if using, to serve
