SALADS: This is a twist to the traditional way of serving macaroni with cheese, with the added nutritional value from the other ingredients.


MACARONI SALAD:






1 ¾ cup spiral or elbow macaroni                               

6 hard-boiled eggs, chopped

3 oz. finely grated cheddar cheese                                                      

1 cup thinly sliced celery

1 cup mayonnaise                               

2 tbsp. finely chopped green onion

½ tsp. dry mustard                                                      

½ tsp. salt

3 tbsp. slivered almonds, toasted






Follow instructions on package to cook macaroni in salted boiling water until al dente or preferred doneness. Drain and cool completely.


Combine celery, mayonnaise, onion, dry mustard and salt in a large bowl. Stir in macaroni and toss well together. Add eggs and cheese, and stir in gently. Sprinkle with almonds. Chill well before serving.
