SALADS: This is a popular salad that is enjoyed by my family.



CALIFORNIA SALAD WITH CURRY DRESSING:







dressing:

    ¼ cup vinegar                                                         
    1 tbsp. water
    2/3 cup vegetable or canola oil                   
    ½ tsp. salt
    ¼ tsp. sugar                                                 
    ¼ tsp. curry powder

6 cups escarole or chicory lettuce + 4 cups iceberg lettuce, torn into pieces****

½ cup sliced green onions                                           

1 ½ medium avocado

1 ½ cups cooked chicken, cut into cubes                    

10 slices bacon, cooked crisp and crumble into bits








Combine dressing ingredients in a covered glass jar. Shake well. Refrigerate until needed. Shake well before using.



Combine lettuce and green onions.  Place in large plastic bag and refrigerate until ready to use.  Half avocado, remove pit, peel and sprinkle lemon juice over the flesh; and dice.


To serve:  Put lettuce in serving bowls. Arrange cooked chicken and avocado over greens. Pour dressing over salad and toss well. Sprinkle bacon bits over salad to serve.



**** Mesclun mix of salad can be substituted****
