BUTTER
SAUCE WITH PAPRIKA:
½ cup
butter, softened
1
small onion, finely chopped
2
tsp. hot or sweet paprika
¼
tsp. fresh ground black pepper
pinch
of cayenne pepper, optional
In a
small saucepan, melt 1 tbsp. butter and cook onion over medium-low heat until
soft, 4-5 minutes. Stir in paprika and
pepper. If sweet paprika is being used, cayenne pepper may also be added.
Cool
mixture then beat in remaining butter. Serve at room temperature.
