SALADS: This is not only a delicious salad, but also a good way to serve smoked salmon on its own.


SMOKED SALMON AND FRESH FRUIT SALAD:






1 small papaya, or 2 small mangoes                           

2 ripe avocados

sprigs of watercress                                                    

12-18 slices smoked salmon

lemon juice

dressing:

    2 tbsp. olive oil                                           
    3 tbsp. lime juice
    ½ cup orange juice                                      
    pulp of 3 passion fruit
    2-3 tbsp. sugar                                                        
    freshly ground black pepper
    pinch salt






Peel, seed and slice papaya or mangoes into thick slices. Half, remove stone, peel and slice avocados into thick slices. Sprinkle lemon juice on avocado slices to prevent discoloration.



Arrange on 6 chilled serving plate 2 slices smoke salmon, avocado slices alternating with papaya slices; and garnish with watercress sprigs. Cover with plastic wrap and refrigerate until needed.



To make dressing: Place oil, lime juice, orange juice, passion fruit pulp, sugar to taste, fresh pepper and a pinch of salt in a glass jar with tight-fitting lid. Shake well to combine.



Pour dressing over salad to serve.
