SALADS: When nectarines are in season, enjoy them in this nice salad.

NECTARINE SALAD ORIENTALE:

4 fresh ripe nectarines                                                

1 can mandarin oranges, drained

½ can water chestnuts                                                 

dressing:

    2 tbsp. each white wine vinegar & salad oil                                                

    1/3 cup mayonnaise

salad greens

 

Half nectarines and remove stones. Slice nectarines and water chestnuts. Arrange nectarines petal fashion in salad bowl lined with greens.  Fill centre with mandarin oranges and water chestnuts. Combine dressing ingredients and spoon over salads.
